Produced by Agricola del Sole in Puglia, this Orecchiette pasta reflects the culinary heritage of southern Italy. Crafted using only durum wheat semolina and water, without eggs, the dough is bronze-drawn to create a porous texture and then dried slowly at low temperatures to preserve flavor and bite. The unique small “ear” shape and concave surface allow it to hold seasonings and sauces perfectly, making it ideal for dishes like orecchiette alle cime di rapa, pesto, roasted vegetables, or rich ragùs. Each bite offers a satisfying al dente bite and rustic, homemade appeal.
